Holiday Roast with Pub Fries

Ingredients

  • 1 bag Cavendish Farms Restaurant Style Pub Fries
  • 1 (4-lb) round roast
  • 3 garlic cloves, finely chopped
  • 1/4 cup extra virgin olive oil
  • Salt, to taste
  • 1 tbsp rosemary, finely chopped
  • 1 tbsp thyme, finely chopped
  • 1 tsp black pepper
  • 4 carrots, cut into large chunks
  • 4 shallots, halved
  • 1/2 lb brussels sprouts, halved
  • 2 cups prepared gravy (to serve)

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Pub Fries in the air fryer basket and cook according to packaging instructions.
  3. To prep, place roast on a wire rack set in a baking sheet. Refrigerate, uncovered, for at least 1 hour.
  4. Preheat oven to 450°F.
  5. In a small bowl, combine garlic, olive oil, salt, rosemary, thyme, and black pepper. Rub mixture all over roast.
  6. Place roast in a large roasting pan fitted with a rack. Scatter carrots, shallots, and brussels sprouts around the roast.
  7. Roast for 15 minutes, then reduce oven temperature to 325°F and continue cooking until an instant-read thermometer inserted into the center registers 135°F for medium, about 1.5 hours.
  8. Remove roast from oven, cover loosely with foil, and let rest for 15 – 20 minutes before slicing.
  9. Serve sliced roast with roasted vegetables, cooked Pub Fries, and gravy on the side.
